We are thinking of building a pizza oven YAY! As I have been browsing the galleries for some ideas similar to what I have in mind I noticed something.  There are several builds where people are using thinner oven slabs leaving out the insulation layer both in the slab as well as the outside of the oven. Some of these are very nice looking and I have to think that it had nothing to do with cost.

So I guess my question is why would someone leave it out??
