So I purchased one of the metal doors for my recently completed oven. How do I use this door while cooking? Do I keep it on while the fire is warming up? Will the fire get enough air flow? Do I put it on while the pizza is in the oven?

Any recommendations would be appreciated.

Use the door after baking pizza and no burning wood - coals only. Otherwise lack of oxygen will impair burning and the wooden handles will burn.

The door traps the heat for long baking such as for bread.
