Can I put a water repellent on the outer brick?

No.

As the oven heats up, the chemicals in the repellent will start to break down and no longer retain their bonding properties. Your oven will look “blotchy” once the reaction occurs…

Besides, you don’t want to put any type of liquid chemical on a wood-fired oven. We don’t even recommend using lighter fluid to start the kindling.
